A fifth-generation maple operation producing Catskill Mountain pure maple products since 1898, operating formally as Partridge Sugar House since 1991. With approximately 2,500 taps and wood-fired evaporation, the farm yields 500–700 gallons of pure maple syrup annually. Products include classic maple syrup, maple cream, maple candy, and maple roasted peanuts — all made without filter additives or chemical defoamers. Now with a sixth generation becoming involved.
