One of only a few farmstead operations in New York producing cow's milk cheese exclusively from its own herd — Holsteins, Jerseys, and Brown Swiss. Makes small-batch cheeses in the French tradition including raw milk tomme (Stella Vallis), alpine-style Alpage, camembert, queso blanco, herbed farmer's cheese, kombucha-washed Red Beard, and bloomy rind Moonlight. Also produces probiotic ice cream and cultured kombucha. Farm store on site.
